When attending an ESA/PIP/Universal Credit assessment what is the claimant allowed/not allowed to do?

Dear Department for Work and Pensions,
I have attended several of these with friends and the assessor always sits with the computer screen in between the claimant and himself so the claimant cannot see what he is writing, is this the correct procedure?
Is the claimant allowed to view what the assessor has written before he sends it anything to the DWP?
